چکیده

It is well known that lactic acid bacteria need multiple nutritional requirements for growth. They require numerous amino acids and other growth factors to develop in synthetic media. In this review the amino acid requirements, the effect of L-malic acid and citric acids metabolism on these requirements and the catabolism of amino acids by lactic acid bacteria from wine are discussed, with emphasis on arginine and its amino acid derivates: citrulline and

Nitrogen metabolism in lactic acid bacteria from fruits: a review

Lactic acid bacteria (LAB) are fastidious microorganisms that require an exogenous source of amino acids or peptides, which are provided by the proteolysis of the proteins present in raw material. Generally nitrogenous compounds concentration in fruits and their derivate products are poor. Strains of Oenococcus oeni from wine show a proteolytic system that provides amino acids that are used for...

Abstract-- Lactic acid bacteria are characterized by numerous nutritional requirements

Lactic acid bacteria are characterized by numerous nutritional requirements. The influence of amino acids and peptides on the growth of Pediococcus pentosaceus c1 isolated from argentinean wines was determined. Cells were growth in synthetic media and in the same media added with the following dipeptides: leucine-leucine; leucine-proline; methionine-proline and glycineglycine. In the complete m...

Nutritional Requirements in Multiple Auxotrophic Lactic Acid Bacteria : Geneti ¢ Lesions

In a study of genetic lesions respo"sible for amino acid requirements in multiple auxotrophic lactic aeid bacteria, a systematic attempt was made to isolate mutants that could synthesize each of the amino acids required by the parental strains of Lactocoecus lactis, Enterocoecus flaecium, and Pediococcus acidilactiei. After treatment with appropriate mutagens or, in some cases, spontaneously, s...

Effect of Dietary Protein Sources on Lamb’s Performance: A Review

Protein and energy are the two major components of feed that influence performance of the growing and fattening lambs. Provision of the quality of protein in the lamb’s diet does not only improve the animal performance but also ensures profitable animal production. Different vegetable protein sources are used to formulate the rations for growing and fattening lambs. These protein sources differ...

Antimicrobial Peptides Derived from Milk: A Review

Milk proteins provide a natural source of bioactive peptides with potential health benefits and applications in the food industry. The release of these peptides from milk proteins is achieved either by hydrolysis using digestive proteases or by lactic acid bacteria fermentation. Peptides, particularly those derived from milk proteins, can exert a wide range of nutritional, functional and biolog...
